Bring a large/ medium pot of water up to a boil + a pinch of salt. Add in your udon & cook for 8-9 minutes. Once done strain the noodles & run under cold water to stop cooking process. Set aside.
GF (rice noodles)- soak rice noodles in boiled water for 12-14 minutes until soft to taste. Strain and run under cold water 😊
Remove your veggies from your bag and cut as shown below
Bring a large pan with 2 tbsp of oil up to medium- high temperature. Once hot add in your onion and mushrooms and cook for ~5 min until the veggies start to brown. Next add in your broccoli & cook for another ~5 minutes. Add in your red pepper and let it cook for ~5 minutes again. Everything should be soft and cooked through. Last step is to add in your noodles and your sauce. This should take , you guessed it, ~5 minutes again. Be sure to keep stirring to ensure that everything is evenly coated and the sauce has begun to thicken so it is sticking to the noodles & vegetables.
Transfer to a bowl & garnish with your green onion & enjoy!! 😁
