Preheat your oven to 375 F.
Bring 1 cup of water and your quinoa + a pinch of salt up to a boil. Once boiling, turn down to a simmer, cover, and let cook for ~12 mins.
Remove your veggies from your bag and cut as shown below.
Lightly coat your broccoli, radish & chickpeas in oil + a pinch of salt & pepper, then roast in the oven ~ 11 mins or until browning slightly.
Build your bowl. Rice on the bottom, then your broccoli, radish & chickpeas and don’t forget your cherry tomatoes & spinach! Pour on your spiced tahini drizzle & ENJOY!! 🌿🦄
