Preheat your oven to 400F.
Bring 1 cup of water + your 1/2 cup quinoa + a pinch of salt up to a boil. Once boiling, turn down to a simmer, cover, and let sit for ~10 mins.
Remove your veggies from your bag and cut as shown below.
Toss your chickpeas, onion, and brussels sprouts w/ a splash of oil. Transfer to baking skeet and bake for ~18-20 mins.
Build your bowl. Quinoa on the bottom, then roasted veggies + chickpeas, tomatoes + spinach, then top w/ tahini dressing! Enjoy!
