Bring a medium-large pot of water + a pinch of salt up to a boil.
Once boiling, add in your pasta and let cook for ~ 9 mins. Strain and set aside.
BE SURE TO KEEP 1/3 CUP OF PASTA WATER OFF TO THE SIDE BEFORE YOU STRAIN!!
Remove your veggies and cut as shown below.
Bring a large pan with a splash of oil up to medium-high heat. Add in the diced shallot and cook for 2 mins, until they start to brown. Then, add in your mushrooms and cook for another 5 mins.
Next, add in your pumpkin sauce + your saved pasta water (if you forgot just add 1/2 cup normal water), and cook for ~1 min, stirring constantly.
Add in your pasta + spinach, and stir until fully incorporated and until the spinach has wilted. Cook for another ~2 mins, until the sauce thickens.
Plate your pasta, and garnish with your parsley. Enjoy!
