Bring a medium- large pot of water + a pinch of salt up to a boil. Once boiling add in your pasta and let cook for approx. 9 minutes. Strain and set aside
Before you put your pasta in to your water. place your rapini to let boil for ~3 minutes. It takes away from some of the bitterness :)
Remove your veggies from the bag and cut as shown below
***zucchini that we got were MASSIVE so we broke it chopped it up already for you guys
Bring a large pan with a splash of oil up to medium high heat. Add in your zucchini and cook for 5 minutes until it starts to brown. Then add in your onion and cook for another ~ 4 minutes. Next your boiled rapini + your pesto and stir for just a minute or two before mixing in the pasta, let everything come together for stirring constantly for ~ 5 minutes
Transfer your pasta to a bowl and don’t forget to garnish with your hemp parmesan! Enjoy!!
