What’s in the bag:
Bring a medium pot of water + a pinch of salt up to a boil. Once boiling, add in your soba noodles and cook for ~12 mins. Once done, run your noodles under cold water to stop the cooking process, then set aside.
RICE NOODLES: Bring a large kettle / pot of water up to a boil. Once boiling, cover your noodles and let them sit for ~8 mins. You will know they’re done when there is no ‘crunch’ when tasting. STRAIN AND RUN UNDER COLD WATER and set aside. Add into the recipe wherever soba noodles are listed :)
Remove your veggies from the bag and cut as shown below.
Bring a large saucepan + 2 tbsp of oil up to medium-high heat. Once hot, add in your shallots and cabbage and cook for ~ 5 mins, until they start to brown. Next, add in your red pepper and carrot, and cook for another ~7 mins. Turn the heat down to low, then add in your noodles + sauce, toss thoroughly, and cook for another 2 mins.
Plate your noodles and veggies, then garnish with your green onion and cilantro & ENJOY!! 😁😁

sauce: peanut butter, apple cider vinegar, maple, tamari, sambal
