mint balsamic Orzo salad

ingredients: found at the end of this page

Step 1

Bring a large pot of water + a pinch of salt up to a boil. Once boiling, add in your orzo and let cook for 9-11 minutes or until the pasta has no more ‘crunch’ when you taste it. Once done, strain and set aside.

Step 2

Remove your veggies from the bag and cut as shown below.

Step 3

Transfer your orzo to a bowl and mix together with the rest of the ingredients, leaving half of your parsley as a garnish.

Step 4

Transfer to a serving bowl & add the last bit of your parsley then ENJOY 😊🌸🌿

ingredients: orzo, tomato, cucumber, pecans, raisins, parsley, shallot, chickpeas

sauce- garlic, mint, lemon juice, balsamic, olive oil

GF sub: GF macaroni

nut-free sub: sunflower seeds
