 MUSHROOM TACOS

What’s in the bag:

mushroom marinade

savory tahini drizzle

mushrooms

Coleslaw

avocado

onion

lime

corn tortilla

Ingredients: found at the end of this page

Instructions:

STep 1

Remove your veggies from the bag and cut as shown below.

STEP 2

Once your veggies are cut, bring a large pan with 2 tbsp of oil up to medium-high heat. When your pan is hot, add in your mushrooms + onions and let cook ~ 5 mins. Then, add you marinade and keep cooking until all of the liquid has reduced (~ 12 mins). Stirring regularly helps the steam escape and the sauce reduce quicker.

STEP 3

In a separate bowl, mix your avocado with 1/2 of your lime + salt & pepper. Mash until fully incorporated.

STEP 4


Cooking your tortillas: Bring a smaller pan up to a high heat. DO NOT USE ANY OIL! Once it is hot, one at a time, place the tortilla in the pan, letting them sit for 30-45 seconds. The tortillas should be JUST starting to brown on each side. BE SURE TO KEEP THEM UNDER A TOWEL UNTIL YOU BUILD YOUR TACOS.

STEP 5

Build your tacos! Tortilla - avocado - mushrooms - coleslaw - savory tahini dressing & ENJOY!! 😁😁

sauce: tahini, tofu, GF soy, mirin, sesame oil, sriracha

marinade: GF soy, sesame oil, five spice, brown sugar

coleslaw: cabbage, veganaise, white vinegar, mustard, salt & pepper
