Remove your veggies from the bag and cut as shown below.
Once your veggies are cut, bring a large pan with 2 tbsp of oil up to medium-high heat. When your pan is hot, add in your mushrooms + onions and let cook ~ 5 mins. Then, add you marinade and keep cooking until all of the liquid has reduced (~ 12 mins). Stirring regularly helps the steam escape and the sauce reduce quicker.
STEP 3
In a separate bowl, mix your avocado with 1/2 of your lime + salt & pepper. Mash until fully incorporated.
Cooking your tortillas: Bring a smaller pan up to a high heat. DO NOT USE ANY OIL! Once it is hot, one at a time, place the tortilla in the pan, letting them sit for 30-45 seconds. The tortillas should be JUST starting to brown on each side. BE SURE TO KEEP THEM UNDER A TOWEL UNTIL YOU BUILD YOUR TACOS.
