Bring your rice + 2 cups of water and a pinch of salt up to a boil. Once boiling, turn down the temperature to simmer, cover and let sit for 13-15 minutes.
Remove your veggies and cut as shown.
Bring a large pan with 1 tbsp of oil up to medium heat. Once hot, add in your mushroom and your onion, cook for 4-5 minutes until they just start to brown and soften. Next add in your broccoli & kimchi, cook for another 5 minutes. When your rice is finished add it in with your pan mixture along with your edamame and your sauce, stir until everything is fully coated ~ 5 minutes. Right before you finish add in half of your green onion and mix quickly.
Transfer to a bowl. Sprinkle with the rest of your green onion & ENJOY!!🌿😜
