Bring 1.5 cups of water up to a boil (kettle works best). Once boiling pour over your cous - cous and cover. Let sit for ~ 10 min
GF: 1 cup water + quinoa + pinch of salt. Bring to boil. Once boiling cover, turn down to simmer and let sit for 12- 14 minutes.
Remove your veggies from your bag and cut as shown below. 😇🌱
In bowl combine your cucumber, parsley, tomato + shallot. Also mix the juice of your lemon + add in 2 tbsp of oil (olive oil would be best) + a nice pinch of salt and pepper.
Pour half of your dressing into your bowl and mix all its ingredients together.
Build your bowl. Cous cous on the bottom, then tomato + cucumber mix + alfalfa sprouts + avocado and the rest of your lemon drizzle! , ENJOY!! 🌿🦄
