Preheat your oven to 400F.
Bring a medium-large pot of water + a pinch of salt up to a boil. Once boiling, add in your pasta and let cook for ~ 9 mins. Strain and set aside.
Remove your zucchini from the bag and cut as shown below. Then, toss in olive oil + salt and pepper and transfer to baking sheet. Place the baking sheet in the oven and let cook for ~12 mins.
With just a few minutes left on your zucchini, bring a large pan with a splash of oil up to medium-high heat. Add in your sauce, mix, and cook for 7 mins, just until it starts to bubble on the side. Then, add in your baked zucchini, stir to incorporate, then add in your strained pasta. Stir regularly while cooking for another 5 mins.
Transfer your pasta to a bowl and don’t forget to garnish with your hemp parmesan + olive oil + salt and pepper! Enjoy!!
