Bring your quinoa + 1 cup of water up to a boil. Once boiling, bring the temperature down to a simmer, cover, and let sit for ~ 12 minutes.
Remove your veggies from your bag and cut as shown below.
In a small bowl, combine your tomatoes + cucumbers + parsley + lemon dressing and a pinch of salt and pepper. Mix thoroughly.
Once your quinoa is done, transfer to a serving bowl. Add in your spinach + chickpeas + tomato & cucumber mix, crumble your tofu feta & drizzle with your balsamic vinaigrette, ENJOY!
