Bring a large pot of water + a pinch of salt up to a boil. Once boiling add in your pasta and let cook for ~7-9 minutes. Once done strain and set aside. There should be only the slightest bit of crunch to taste.
*** before you strain keep 1/3 cup of pasta water for later use**
Remove your veggies from the bag and cut as shown below
Bring a large pan with a splash of oil up to medium high heat. Once hot add in your mushroom and diced onion and cook for ~5 minutes. There should start to be some nice browning. Next add in your green pepper and let cook for ~4 minutes, then add your sauce + 1/3 pasta water (if you forgot it is ok just add 1/4 cup regular water). Add your pasta and stir constantly until the sauce has thickened up and is sticking to the pasta, 5-7 minutes. Just before you remove the pasta, add in half your green onion :)
Plate your pasta and garnish with the rest of your green onion & ENJOY 😊🌸🌿
