Bring your rice + 1 cup of water and a pinch of salt up to a boil. Once boiling, turn down the temperature to simmer, cover and let sit for 13-15 minutes.
Remove your veggies and cut as shown. ** Cilantro is in same bag as spinach**
Bring a large pan with 1 tbsp of oil up to medium heat. Once hot, add in your diced shallots and cook for 4-5 minutes until they just start to brown. Next add in your chickpeas & cook for another 5 minutes. Just as your sauce starts to thicken add in 1/4 cup of water + your spinach and stir regularly until all your spinach has wilted down. **you can always add water in slowly to control the thickness to your own preference
Transfer to a bowl. Drizzle with your coconut sauce & ENJOY!!🌿😜
