Buffalo CAuliflower Tacos

STEP 1

Preheat your oven to 400F.

Remove your plants and cut as shown below.

STEP 2

Use 3/4 of your buffalo sauce to toss your cauliflower in. Once covered, transfer to baking sheet and roast for 12-14 minutes, depending on your preference.

STEP 2

While your cauliflower is roasting, bring a small dry pan (no oil) up to medium-high heat. Place your tortillas in the pan, flipping after about 1-2 minutes. Repeat with other side, and continue until all your tortillas are finished. ** VERY IMPORTANT – place your shells in a kitchen towel to make sure they don’t dry out.

STEP 4

Build your tacos. Shell – cauliflower - coleslaw – cilantro & a squeeze of lime. ENJOY!
