Bring your rice up to a boil + 1 cup of water and pinch of salt. Once boiling, turn down to a simmer, cover, and let sit for ~12 mins.
Remove your veggies cut as shown below.
Bring a large pan + a splash of oil up to medium-high heat. Once hot, add in your shallots and let cook for ~ 5 mins until they start to brown. Next, add in your chickpeas, stirring regularly, and let cook for 3 mins. Place your red pepper into the pan and, still stirring regularly, cook all ingredients for ~5 more minutes. Lastly, add in your sauce + 2 tbsp of water. Turn the temperature down to a medium-low, mix all ingredients and let cook for ~ 6 mins, or until the sauce reaches your desired consistency (the longer you cook it, the thicker it will get).
