Pre heat your oven to 425 F
Bring 1 cup of water and your rice + a pinch of salt up to a boil. Once boiling turn down to a simmer and let sit for 10-14 minutes.
Remove your veggies cut as shown below. Be sure to give your beets and veggies a good wash prior to cutting.
Once your veggies are cut, toss your golden beets into a bowl and coat with oil + salt and pepper. Transfer to a baking sheet. Place in the oven and cook for ~20 minutes.
* You can just keep that bowl off to the side as you can use it again
** If you are not a fan of raw onion we suggest adding your shallots into this step and roast with your beets 😉
In your bowl, grab a new one if you need it, toss your roasted beets, shallots, cucumber & sauce.
Time to build your bowl. Rice on the bottom, all the veggies on top (green onion goes on here!) & be sure to drizzle all that extra sauce over your bowl, Enjoy! 🌿😜
