Pre-heat your oven to 450F.
GF: Bring your rice up to a boil w/ 1.25 cup of water and a pinch of salt. Once boiling, turn down to a simmer, cover, and let sit for ~12 mins.
Remove your sweet potato and cut as shown below…you can also cut them into cubes if that’s easier! Toss in oil + salt & pepper, then transfer to a baking sheet and place into oven for ~ 18 mins, flipping once half-way through.
Bring a small pan up to medium heat. Once the pan is hot, add in your Jackfruit and cook until it is at your desired temperature. If there are any big pieces, use a fork to pull apart.
If you want to toast your bread, put it in the oven for a few minutes until toasted to your liking. Next, build your sandwich! Pulled pork, coleslaw, watercress + some spicy mayo! (save some for dipping your fries!)
