Bring a large pot of water + a pinch of salt up to a rolling boil. Once boiling, add in your pasta and cook for ~11 minutes. ** VERY IMPORTANT: Before straining, set aside 1/3 cup of pasta water.
Remove your basil and cut into long strips (chiffonade).
In a large pan, bring a small plash of oil up to a medium-high heat. Once hot, add in your pasta sauce and let cook for 2 minutes. Stirring regularly, next step is to add your pasta + your pasta water you set aside (if you forgot, just add in a ¼ cup of regular water). Stir until full incorporated and keep stirring occasionally for ~4 minutes or until the sauce has ‘thickened’ up.
Transfer to a serving bowl. Top with your tofu feta, chopped basil + a splash of olive oil + a pinch of salt and pepper. ENJOY!
