Aloo Gobi

STEP 1

Pre-heat your oven to 450 F.

Bring your rice + 1 cup water & a pinch of salt up to a boil. Once boiling, turn the heat down to simmer, cover, and let sit for ~14 mins.

Step 2

Remove your veggies from your bag and cut as shown below.

** The smaller the potato cubes the better, ~1 cm cubed.

STEP 3

In a large bowl, toss your cauliflower and your potato with salt + pepper and a small amount of oil. Transfer to a baking sheet and cook in the oven for ~20 mins (flipping once or twice throughout). You want to see some good browning around the edges!

Step 4

Bring a large saucepan up to medium-high heat with 1-2 tbsp of oil. Once hot, toss in your spice mix to heat up the spices and bring some flavour out (it should start to smell really good!). Then, add your onion and stir to incorporate as much of the mix as you can with the onion, ~5 mins.

**Make sure you stir often to avoid burning your spices and to prevent sticking!

Next, add your tomato and mix again, then let cook for another 5 mins, stirring throughout. Turn down to a low heat, and let simmer until your potato & cauliflower are finished. Once finished, add them to the pan and cook for ~2 more mins. Add a squeeze of lime and half your cilantro.

Step 5

Transfer to a plate, top with your remaining cilantro & enjoy! 🌿😜
